Material beef skin stewed with cinnamon:
- 500 gram of beef skin
- 100 gram of red apple
- 1 teaspoon pink salt
- 1 tablespoon Bien Hoa organic brown sugar
- 1 tablespoon black soy sauce for pho
- 2 cinnamon sticks (about 20cm long each)
- 5 star anises
- 500g Baby Bitter Melon (optional)

Put all ingredients in a pot, covered with water. Close the lid of the pot, turn on medium heat, until boiling, then switch to low heat to simmer the skin for 3 hours. After 1 hour of stewing, take out all the red apples, anise, and cinnamon, and stew the beef skin for another 2 hours.

The red apple, cinnamon bark and star anise have just been taken out, then I add water, squeeze it. Thí liquid can be used to water the tree. While stewing, remember to check, if the water is running out but the skin is still not as soft as you want, add more water!
